Carlos Henriques is the co-owner and co-founder of Sustainable Hospitality Group (SHG), a pioneering organization in sustainable dining, consisting of Restaurant Noll, Restaurant Elm, and Neighbourhood Restaurant Nolita. Carlos' passion for sustainability and zero-waste dining led to the creation of Restaurant Nolla, recognized globally as one of the most sustainable dining venues.
Carlos began his career with a degree in hospitality management and launched his own catering company in his native Portugal. He then traveled the world, training with renowned chefs at prestigious restaurants such as Le Mirazur in France and Chez Dominique in London. His journey eventually brought him to Finland, where he co-founded Restaurant Nolla alongside partners Albert Franch Sunyer and Luka Balac in 2018.
Restaurant Nolla became the first zero-waste restaurant in the Nordic countries, earning the Michelin Guide Sustainability emblem and several other accolades for its innovative approach to waste reduction and sustainable practices. In 2022, SHG expanded with the opening of Restaurant Elm, a Mediterranean eatery focused on simplicity and seasonality, situated in a space dedicated to ecological research and discussions.
SHG's latest addition, Neighbourhood Restaurant Nolita, opened in 2023 in Punavuori. Nolita offers a delightful combination of freshly baked breads, lunches, dinners, and an exceptional wine selection, providing a cozy spot for locals to enjoy high-quality dining.
Carlos Henriques continues to lead SHG with a vision of making the hospitality industry more sustainable, focusing on reducing food wastage, minimizing carbon footprints, and delivering exceptional dining experiences.
